Beet Kvass
Beets from Sauvie Island’s Pumpkin Patch are fermented with whey to make this delicious, savory, blood cleansing, and energizing digestive beverage . Traditionally, kvass was a russian peasant drink full of plenty of lactobacilli cultures and made from rye berries — great to fortify the blood and your body. I add a pinch of salt before drinking, you may want to add more to taste. Try adding your own flavor with a sprig of rosemary or some juniper berries!

Eat it straight away or soak it overnight in yogurt or coconut milk for a real treat.
And yes, this healthy granola is GLUTEN-FREE by virtue of the wonderful availability of Bob’s Red Mill GF Oats, which are grown in isolation to protect against any possible wheat contamination.

Homemade Fermented Sodas: want to learn how to make delicious bubbly drinks at home? Come learn how to make Kombucha, lacto fermented sodas and ginger ale. You’ll even get to take a few bottles home! A beautiful mayonnaise full of all the best saturated fats: organic macadamia nut oil, extra virgin coconut oil and extra virgin olive oil are blended with citrus and pastured eggs for a bright and slightly nutty mayo that turns any meal into a gourmet experience. citrus cured beef jerky

The Pregnancy Nutrition Series is a 6 course series co-taught by Dr. Rebecca Asmar of Bambu Clinic and Tressa Yellig of Salt, Fire & Time. The topics include Pre-conception diets and detox, First Trimester Nutrition: Remedies & Recipes, Second Trimester Nutrition: Hormone Balance and Vaccinations , Third Trimester Nutrition & Birth Preparation: Making a Food Plan, Postpartum Management: Breastfeeding & Healing, and Baby’s First Foods: Introductions. We will share recipes, nutrition information, a variety of resources and other helpful hints to make your relationship to your baby healthy and as comfortable as possible. The classes will be discussion based and information packets will preceed each class to give a basis for the conversation. Classes start at 6:30 and will run until 8pm. There will be small tastings of recipes and tea served.

This class is to teach you the basics of working with the varied winter citrus fruits. Marmalades are some of the oldest forms of preserves — working with the natural sugars and pectins in the fruit seeds and skins to extend their shelf life and create a bright and delicious spread. Winter Citrus is perfume from the meyer lemon to the seville orange to oro blanco grapefruits and more. I fell in love with the colors of every juicy pearl working with June Taylor in Berkeley, CA. I hope to share some of this appreciation with you and give you the tools to experiment with a variety of citrus and sweeteners at home. We will learn to process citrus fruits, make a big batch of marmalade together and you will go home with a lovely jar to enjoy yourself.
