Rendered lard contains about 40% saturated fat, 60% monounsaturated fat. It can be hard or soft depending on how the pig was fed, and is about 2-3% palmitoleic acid (which posesses antimicrobial properties*)

Note: crisco (yuck-o) was created to replace this traditional ingredient.

Lemon Garlic Kimchi

This is a kimchi styled cultured vegetable made with a lemon, garlic and jalapeno paste — the difference between this and another of our krauts is the processing. With kimchi, the vegetables are wilted in salt before being cultured which allows them to retain the crispy crunchy texture of a raw vegetable. The flavor is mild but the nose is a strong rich fresh garlic. This is a great introduction to cultured vegetables and easy to incorporate. The vegetables are crisp and delicious — it is a great source of Vitamin C and probiotic cultures!

Winter Citrus Marmalade 2/8/2012

This class is to teach you the basics of working with the varied winter citrus fruits. Marmalades are some of the oldest forms of preserves — working with the natural sugars and pectins in the fruit seeds and skins to extend their shelf life and create a bright and delicious spread. Winter Citrus is perfume from the meyer lemon to the seville orange to oro blanco grapefruits and more. I fell in love with the colors of every juicy pearl working with June Taylor in Berkeley, CA. I hope to share some of this appreciation with you and give you the tools to experiment with a variety of citrus and sweeteners at home. We will learn to process citrus fruits, make a big batch of marmalade together and you will go home with a lovely jar to enjoy yourself.

Class begins at 6:30pm
