Commercial sodas are full of sugar, their acids burn our stomach and rot our teeth, but giving up effervescent drinks isn’t necessary for good health. You can make your own and control the sweetness and flavors simply and easily.

This is an introductory course to learn the basics of making deliciously simple sodas at home. We will discuss the differences between lacto fermentation, water kefirs and starter yeasts. Using a starter yeast, we will set up a “ginger bug” and students will make and bottle a batch of rootbeer to take home. These techniques can be applied to any type of homemade sodas. There will be examples of homemade sodas to taste as well. Please bring two, pint-sized mason jars with lids for taking soda home.
